Juices in a healthy diet: recommendations for consumption based on chemical composition data
AbstractJuices from fruits and vegetables show a complex composition, they contain several hundred different substances. In addition to water and common metabolites such as carbohydrates, juices contain organic acids, minerals and trace elements, vitamins, polyphenolic and other biologically active compounds. Moreover, each type of juice is characterized by a unique set of natural compounds and is able to contribute to providing the human body with micronutrients. The study and analysis of the nutrient composition of commercially produced juices, which are currently the most consumed by the population, contributes to understanding the place of juices in healthy nutrition and is intended to contribute to the development of relevant recommendations for their use.
The purpose of the research was to evaluate their nutritional density and nutritional value based on the analysis of published data on the nutrient composition of juices, and then offer recommendations on the use of juices in healthy nutrition.
Material and methods. The analysis of nutrient profiles of ten popular types of juices presented on the market of the Russian Federation (apple, orange, grapefruit, grape, tomato, pomegranate, pineapple, carrot, cherry, peach) was carried out. Nutritional density indices (NDI) were calculated as the degree of satisfaction of a person’s need for a particular nutrient when filling the calorie value of the diet (2500 kcal) only with this product. The integral score characterizing the degree of the juice compliance with an optimally balanced daily diet, taking into account the energy content, which provides 5% of energy, was also calculated.
Results. NDI and the integral score of various types of juices show that juices have a high nutritional value and can make a significant contribution to the intake of some nutrients and bioactive compounds. The most important substances from juices are polyphenolic compounds (flavonoids, phenolic acids) and carotenoids (β-carotene, lycopene). All juices also contain significant level of potassium and magnesium, and they can serve a source of some vitamins and minerals (depending on the individual nutrient profile): citrus juices are the source of vitamin C and folates, pineapple – of manganese, vitamin C and B vitamins, apple – chromium, grape – molybdenum, iron and chromium, pomegranate – copper and tannins, cherry – iron, copper and pantothenic acid; vegetable juices, such as tomato and carrot juices, contain a wide range of essential micronutrients. Juices with pulp and juices without clarification can be a source of pectins and dietary fiber. Modeling of juice rotation in the diet shows that in this case, 75% of the nutrients (from 32 studied) will have a NDI≥1, i.e. provide a meaningful intake with juice.
Conclusion. The characteristic features for each type of juice regarding the content of vitamins, minerals and other biologically active compounds should be taken into account to assess the place of juices in healthy nutrition and develop modern recommendations for their consumption. Such recommendations include alternating different types of juices in the diet, as well as, if necessary, the choice of certain juices to include in the diet, depending on the individual’s nutritional needs.

Индекс пищевой плотности по нутриенту показывает степень удовлетворенности потребности человека в этом нутриенте при наполнении калорийности рациона в 2500 ккал только этим продуктом. Значения ИПП ≥1 говорят о значимом содержании нутриента в соке, а спектры, составленные в порядке убывания индексов, наглядно демонстрируют, какие из пищевых и биологически активных веществ превалируют в соке определенного вида. Так, из табл. 2 видно, что все соки содержат в достаточно высоких концентрациях такие важные макроэлементы, как калий и магний, а соки с мякотью - пектины и пищевые волокна. Яблочный сок может быть важен с точки зрения поступления в организм хрома и фенольных кислот, апельсиновый и грейпфрутовый - флавоноидов, витамина С, фолатов; ананасовый - марганца, витамина С, меди, витаминов группы В, витамина К. Томатный сок богат ликопином, а морковный - β-каротином, при этом в этих соках в значимых количествах также содержатся почти все минеральные вещества и витамины. Виноградный сок может быть важен с точки зрения поступления в организм фенольных кислот, флавоноидов и таких микроэлементов, как хром, молибден, марганец и железо. Гранатовый сок богат флавоноидами, танинами, фенольными кислотами, медью, вишневый - флавоноидами, фенольными кислотами и медью, а также, кроме этого, марганцем и пантотеновой кислотой. Из персикового сока можно получить значимые количества витамина Е, витамина С, меди, β-каротина, фенольных кислот, ниацина, марганца, железа. ИПП по суммарным углеводам в соках составляют от 1,1 в томатном до 1,7 в виноградном, содержание других макронутриентов - белков и жиров, находится в соках в целом на низком уровне.
Интегральный скор соков представлен в табл. 3. Анализ полученных значений показывает: несмотря на то что соки - это продукты с относительно высоким природным содержанием моно- и дисахаридов, они могут внести существенный вклад в поступление в организм значительного числа различных нутриентов.

Кроме того, ИПП и ИС соков наглядно демонстрируют различия в содержании нутриентов в разных видах соков, что позволяет дать рекомендации о необходимости чередования соков в рационе для обеспечения организма наиболее широким спектром необходимых ему веществ. Моделирование чередования в рационе 10 указанных видов соков позволяет сформировать усредненный спектр пищевой плотности сока: Фл67,8, β-к12,1, вит.С7,6, Mn7,5, ФК3,2, К3,0, Cu2,8, вит.Е2,5, Лп2,5, Cr2,3, П2,2, Ф1,9, Угл1,5, Mg1,5, Mo1,4, вит.В61,4, вит.В11,2, Тн1,2, P1,1, Fe1,1, Бт1,1, Нц1,1, ПВ1,0, ПК1,0, Ca0,7, вит.К0,6, I0,5, вит.В20,5, Zn0,4, Бел<0,4, Жир<0,4, Se0,4.
Таким образом, доля нутриентов с ИПП ≥1 составляет 75% (24 нутриента из 32), что говорит о высокой пищевой ценности соков при их чередовании в рационе. Особенно важным является присутствие в соках так называемых вторичных метаболитов растений, к которым относятся полифенольные соединения (флавоноиды и фенольные кислоты) и каротиноиды (β-каротин и ликопин). Эти вещества обладают выраженным антиоксидантным действием и, согласно имеющимся данным, могут играть значительную роль в снижении риска неинфекционных заболеваний. Особенно важно, что представленные данные относятся к сокам, изготавливаемым промышленностью, а в настоящее время такие соки наиболее часто употребляются населением из-за их доступности и широкой представленности на рынке пищевой продукции.
На рисунке показан вклад сока в суточное поступление в организм человека энергии и ряда основных нутриентов, содержащихся в соках, при чередовании в рационе различных видов соков и в зависимости от суточного объема их потребления. Так, при потреблении сока около 150 мл/сут поступление в организм энергии будет на уровне около 2,4% от суточной потребности, при этом поступление флавоноидов будет свыше 170%, фенольных кислот - свыше 8%, β-каротина - до 30%, витамина С - до 20%, калия и меди - свыше 7%, фолатов - около 5%, пектинов - до 6% от рекомендуемой нормы потребления.

Заключение
Анализ нутриентных профилей 10 популярных видов соков (яблочный, апельсиновый, грейпфрутовый, виноградный, томатный, гранатовый, ананасовый, морковный, вишневый, персиковый) на основе расчета их ИПП и ИС позволяет говорить о характерных особенностях каждого вида сока с точки зрения содержания в нем пищевых и биологически активных веществ. Таким образом, можно предложить следующие общие рекомендации по потреблению соков: 1) чередование в рационе различных видов соков; 2) при формировании индивидуальных рационов питания необходимо учитывать индивидуальные потребности человека в конкретных нутриентах, что позволяет сделать выбор определенных соков и размера порции на основании представленных в работе спектров пищевой плотности соков.
