Spectrum of food diversity of megapolis’ inhabitants obtained by the analysis of buying activity
AbstractThe food diversity is a significant indicator of a healthy diet.
The aim of the study was to assess the indicators of food diversity in the metropolis (Moscow) based on the analysis of consumer activity in a large retail chain.
Material and methods. 201 904 holders of loyalty cards of the retail network were selected from the depersonalized purchase data for 2016–2018 according to the following selection criteria: the presence of a dense segment of purchases (more than 4 weeks, where there was at least 1 purchase in 2 weeks), where the total cost of purchases was at least 4700 rubles and at least 4 different products were purchased. From of these, 111 136 buyers have data available by gender, 43 046 by age. The classification of a set of purchased products and dishes by food groups was carried out, and complex dishes were transformed into a set of their ingredients and the distribution of the unique values of the corresponding food groups was carried out. Counting the number of unique preferences (count base diversity) by the number of positions in each of the 6 food groups (cereals, fish and meat, fat products, dairy products, vegetables, fruits and berries) allowed us to estimate the amount of food diversity. The total number of food categories in all subgroups was also calculated.
Results. The low value of food diversity in the category of cereals and cereals was found in 2/3 of buyers, in the category of vegetables and fruits in 60% of buyers, in the category of meat and fish products in half of buyers, in the category of fat-and-oil products in 63.7% and in 44.2% of buyers of dairy products. An acceptable total number of categories of purchased products (more than 20 per week) was achieved only in 14.5% of men and 16.7% of women from our sample. In general, lower indicators of dietary diversity are typical for men and young people (up to 45 years old).
Conclusion. Thus, it can be concluded that the importance of food diversity as a factor of health protection is underestimated by the population, especially by young people, which can lead to an increase in the burden on healthcare due to the earlier debut of a wide range of chronic diseases.

Анализ потребления масложировой продукции показывает, что у большей части покупателей (63,7%) число приобретенных категорий не превышало единицу (рис. 7), при этом у женщин разнообразие приобретенной масложировой продукции было традиционно выше, а у молодых покупателей ее разнообразие оказалось более низким, чем в остальных возрастных группах.
Приемлемое общее число категорий приобретенных продуктов (>20 в неделю [1]) достигнуто у 14,5% мужчин и 16,7% женщин из нашей выборки (рис. 8), при этом женщины демонстрируют более высокие показатели пищевого разнообразия, чем мужчины. Возрастные различия оказались наиболее значимыми для лиц молодого возраста: общее число категорий продуктов, приобретенное ими, оказалось существенно ниже, чем у остальных групп. Различия этого показателя между лицами среднего и старшего возраста оказались несущественными.
Обсуждение
Данная работа является уникальной в отношении информации об уровне пищевого биоразнообразия среди крупных групп населения (наша выборка >100 тыс. человек), поскольку только торговая сеть "Азбука Вкуса" использует систему учета истории покупок по полным торговым чекам. Ценность полученных данных обусловлена тем, что пищевое разнообразие является очень важным прогностическим фактором сохранения здоровья, и аналогов нашей работы в мировой литературе нам найти не удалось.
Представленные в нашей работе данные демонстрируют довольно низкую величину пищевого разнообразия у данной когорты покупателей крупной торговой сети российского мегаполиса как по отдельным пищевым группам, так и по общей совокупности категорий продуктов. Недостаток внимания населения к качеству своего питания может быть обусловлен многозадачностью ритма современной жизни, монотонное питание облегчает существование в условиях дефицита времени. Механизм приедаемости, в нормальных условиях защищающий нас от монотонного питания, нетрудно преодолеть при широкой доступности ароматизаторов, усилителей вкуса, соусов и приправ. Сложившееся положение, скорее всего, обусловлено недостатком знаний о важности пищевого разнообразия для здоровья и предупреждения хронических заболеваний, нежели ограниченностью ассортимента, что требует от медицинского сообщества усилий по широкой пропаганде значимости данного аспекта питания.
Ограничением для данной работы является использование нами сведений о регулярных покупках вместо данных фактического питания, что снижает точность оценки величины пищевого разнообразия, но получить объективные данные о фактическом питании более чем 100 тыс. человек невероятно сложно, и мы постарались повысить точность использованных данных применением жестких критериев отбора, которые позволили уменьшить вероятность недоучета значимых покупок еды в других магазинах или регулярного питания вне дома.
При оценке гендерных различий мы убедились, что женщины по всем изучаемым параметрам отличаются от мужчин большей величиной разнообразия питания, что может быть обусловлено тем, что в семьях женщины чаще покупают продукты для приготовления пищи, и, к сожалению, у нас не было возможности выделить когорту одиноких лиц. Анализ возрастных различий показал очень интересные результаты: во всех пищевых группах, кроме фруктов, лица молодого возраста отличались более низкой величиной пищевого разнообразия, что может свидетельствовать о большем внимании к питанию со стороны лиц старших возрастных групп из-за менее жестких лимитов времени у состоявшихся профессионалов и появления проблем со здоровьем. Однако именно в молодом возрасте, когда происходит закладка функциональных резервов организма, высокое качество питания имеет определяющую роль в отношении профилактики так широко распространившихся сейчас "болезней цивилизации", а увеличение пищевого разнообразия в более зрелом возрасте имеет существенно меньшую эффективность [21]. Как и в отношении пищевых волокон, когда рекомендации по увеличению потребления цельных зерен, овощей и фруктов не смогли значимо повлиять на уровень потребления пищевых волокон населением в 1999-2008 гг. [22, 23], рекомендации по увеличению пищевого разнообразия рациона [1] также выполняются не в полном объеме. Путь к решению проблемы, как и в случае с пищевыми волокнами, может лежать в разработке и популяризации высокотехнологичных пищевых продуктов со сложным составом, включающим ингредиенты как разных пищевых групп, так и новых источников пищи. Вероятно, также потребуется определенная дотационная помощь со стороны государства, поскольку такие модифицированные пищевые продукты не могут быть дешевыми, иначе данный подход не сможет стать массовым. В связи с этим очень важна информация по выявлению наиболее популярных пищевых продуктов, которые должны стать объектами для указанной технологической модификации. В этом направлении нами запланирован более детальный анализ имеющейся базы данных покупок, где объектами исследования будут как страты продуктовых групп - носителей определенных нутриентов (пищевых волокон, моно- и дисахаридов, насыщенных жиров), так и состав потребления пищевых продуктов внутри каждой из пищевых групп.
Таким образом, можно заключить, что лица молодого возраста, особенно мужчины, недооценивают значимость пищевого разнообразия как фактора защиты здоровья, что в перспективе опасно для них более ранним дебютом хронических заболеваний с плохим прогнозом в отношении осложнений и исходов.
