Аnalysis of global trends in the use of whole-grain products in the nutrition of the population

Abstract

In recent years, there was a worldwide increase of interest in foods with whole grain components. The number of studies that confirm their wide functional potential and importance in the prevention of chronic non-communicable diseases is expanding. At the same time, there is no agreement reached on the definition of the concept of whole grain products and the optimal level of its consumption in the world; and the provisions enshrined in national regulations are quite contradictory. In Russian practice, there are no recommendations on the use of whole grain products in nutrition.

The aim of this research was to analyze world trends of using whole-grain products in the nutrition of the population.

Material and methods. The review is based on the analysis of publications presented in the PubMed, Scopus, Food Science, Technology Abstracts databases mainly over the past 10 years.

Results. The article discusses the use of whole-grain products in the nutrition of the population and their role in prevention of non-communicable diseases. The results of scientific researches demonstrating the positive experience of using whole grains in preventing obesity, type 2 diabetes mellitus, and cardiovascular pathology are presented. The current dietary recommendations on the level of consumption of whole-grain products in the world, as well as the commitment of the population to them, are summarized. The problems of whole-grain products identification and product labelling are considered.

Conclusion. Despite growing interest in whole-grain products around the world, consumption levels remain insufficient to realize their potential. Solution to this problem can be the achievement of consensus on whole-grain products with the participation of scientific communities and representatives of the food industry, as well as raising awareness among the population about the benefits of whole grains.

На 6-м Международном саммите по ЦЗП (13-15 ноября 2017 г., Вена) были определены ключевые цели и действия, способствующие увеличению их потребления в рамках глобальной "Инициативы по цельному зерну" (Whole Grain Initiative). Согласование понятия ЦЗП выделено приоритетом для обсуждения, однако вопрос до настоящего времени остается открытым.

Международная ассоциация химии злаков (ААССI) позиционирует, что ЦЗП должны состоять из неповрежденных, измельченных, дробленых или плющеных хлопьев зерновых, основные анатомические компоненты которых (крахмалистый эндосперм, зародыш и оболочка зерна) присутствуют в тех же пропорциях, что и в нативных зерновых. Допускаются небольшие потери компонентов в процессе обработки, но они должны составлять менее 2% зерна или менее 10% отрубей [23].

Согласно решению Глобальной рабочей группы по дефинициям цельного зерна (WGI Global Working Group on Whole Grain Definitions) "цельнозерновой продукт" должен содержать не менее 50% цельнозерновых ингредиентов в сухом продукте. Продукты, содержащие минимум 25% цельнозерновых ингредиентов в сухом продукте, могут иметь указание на наличие цельного зерна на упаковке, но не могут быть обозначены как цельнозерновые [25].

При этом в соответствии с позицией Консорциума HEALTHGRAIN в Европейском союзе (некоммерческого консорциума ученых и представителей промышленности, работающих с зерновыми продуктами) продукт может считаться цельнозерновым, если в его состав входит не менее 30% цельнозерновых ингредиентов в целом и содержится больше цельного зерна, чем рафинированных зерновых ингредиентов в сухом продукте [15, 23].

Сегодня в мире недостаточно законодательных решений и по маркировке ЦЗП. Согласно позиции Whole Grain Initiative при маркировке рекомендовано указывать процент цельного зерна от всех зерновых компонентов и количество цельного зерна на порцию или на 100 г.

В некоторых странах выделены группы ЦЗП, которые должны состоять полностью или почти полностью из цельного зерна. В Нидерландах на законодательном уровне цельнозерновой хлеб должен состоять на 100% из цельнозерновой муки, и минимум 90% цельнозерновых ингредиентов должно присутствовать в нем по положению в Германии. Скандинавские страны (Норвегия, Дания, Швеция) согласовали, что в однокомпонентных продуктах из муки (зерна) должно быть 100% цельнозернового компонента, тогда как в продуктах сложного состава - более 50% цельнозерновых ингредиентов (51% и более) в пересчете на сухое вещество. Также разрешено заявлять о пользе цельного зерна, если его присутствие в составе продукта составляет не менее 50% на сухой продукт [25].

Несмотря на отсутствие официальных требований, ассоциация производителей французской бисквитной продукции согласовала рекомендации по содержанию цельного зерна для своих изделий: 15-39% цельного зерна в пересчете на общую массу ингредиентов для заявления "источник цельного зерна" и 40% - для вынесения клейма "богато цельным зерном" [23].

В Тайване производителям разрешено выносить клеймо "цельнозерновой продукт" при наличии в его составе 51% и более цельных зерен в сухом продукте [25, 26].

В нормативном документе Малайзии предусмотрено определение ЦЗП для конкретных видов продуктов: 100% цельнозерновых ингредиентов обязательно для пшеничной, рисовой муки и риса, 60% цельного зерна - для хлеба и 25% цельнозерновых ингредиентов или 8 г на порцию - для других продуктов [27].

Американский Совет Oldways по цельнозерновым (Oldways Whole Grains Council) разработал цельнозерновую марку для решения проблемы идентификации ЦЗП. Для указаний на продукте "50% цельного зерна" продукты должны содержать не менее 8 г цельного зерна на порцию и не менее 50% зерновых ингредиентов должны быть цельнозерновыми. За клеймо "100%" продукты должны содержать минимум 16 г цельных зерен на порцию и все зерновые ингредиенты должны быть из цельного зерна [28].

Заключение

Во всем мире отмечается рост интереса к цельнозерновой продукции как среди производителей, так и среди потребителей. ЦЗП обладают широким спектром функциональной активности и при определенном уровне потребления могут рассматриваться как фактор профилактики НИЗ. Рекомендации по включению продукции с цельнозерновым компонентом в питание населения сформированы во многих странах мира. Согласно требованиям к школьному питанию в Европе и США на долю ЦЗП должно приходиться не менее половины всех зерновых в рационе. Однако в целом вопрос об оптимальном количестве ЦЗП в питании населения остается открытым. Исследователи единодушны относительно необходимости расширения доказательной базы по использованию ЦЗП и совершенствованию методик оценки ее эффективности. Глобальной задачей является достижение консенсуса в отношении идентификации ЦЗП с участием научных сообществ и представителей пищевой индустрии. Имеющиеся сегодня расхождения в определении цельнозерновой продукции препятствуют точной оценке уровня ее потребления, в том числе необходимого для достижения позитивных эффектов на здоровье человека.

Для отечественной практики представляется целесообразным разработка национального стандарта, в котором были бы отражены требования к цельнозерновому сырью и уровню цельнозернового компонента в ЦЗП, отсутствующие в настоящее время.
